The CK BASIC Food Handler Training covers all key topics required under Ontario Regulation 493/17 (Food Premises Regulation) to ensure participants understand and apply safe food-handling practices in real-world settings.
1. Legal Requirements
Understand the responsibilities of food handlers, supervisors, and operators under the Health Protection and Promotion Act (HPPA) and local public-health expectations.
2. Foodborne Illnesses
Learn about the major causes of foodborne illness, how pathogens spread, and how to prevent contamination and outbreaks.
3. Food Contamination
Identify the three types of contamination—biological, chemical, and physical—and explore preventive control measures.
4. Microbiology & Factors Affecting Growth
Understand how bacteria multiply and what environmental factors (temperature, moisture, pH, oxygen) influence their growth.
5. Food Safety Management Systems
Discover how monitoring, recordkeeping, and corrective actions form the foundation of effective food-safety systems such as HACCP.
6. Time and Temperature Control
Master proper cooking, cooling, and reheating procedures to keep foods out of the Danger Zone (4 °C – 60 °C / 40 °F – 140 °F).
7. Receiving and Storage
Learn how to inspect deliveries, label, and store foods safely to maintain quality and prevent cross-contamination.
8. Displaying, Serving, and Discarding Food
Review best practices for serving ready-to-eat foods, using utensils, time limits, and maintaining safe display temperatures.
9. Facility and Equipment Maintenance
Understand design, material, and maintenance standards that support sanitary operations in food establishments.
10. Cleaning and Sanitizing
Explore proper manual and mechanical dishwashing, chemical use, and cleaning schedules to maintain a hygienic environment.
11. Personal Hygiene and Health
Recognize how personal habits, illness reporting, and protective clothing contribute to overall food safety.
